Lebanese Rice

Ingredients:


2 cups long grain basmati rice

1/2 cup vermicelli pasta

1/4 tsp cinnamon powder (optional )

salt to taste

4 cups of boiling water

2 tbsp olive oil

1 tbsp fresh parsley leaves, chopped

2-3 tbsp pine nuts , toasted ( can use roasted sliced almonds )


Preparation:


  1. Wash the rice and soak in water for 20 minutes.
  2. Heat olive oil in a thick bottomed pan and add vermicelli and roast till golden brown. Make sure it doesn't get burned ..
  3. Then add drained rice and mix well.
  4. Add cinnamon powder and mix well for 2-3 minutes.
  5. Now add 4 cups of boiling water and salt and bring it to a boil.
  6. Then cook covered at low flame until rice is fully cooked.
  7. Remove from the flame and keep it covered for 5-10 minutes.
  8. Gently fluff the rice with a fork and serve garnished with parsley leaves and toasted pine nuts / sliced almonds...
