Lebanese Rice

Ingredients:
2 cups long grain basmati rice
1/2 cup vermicelli pasta
1/4 tsp cinnamon powder (optional )
salt to taste
4 cups of boiling water
2 tbsp olive oil
1 tbsp fresh parsley leaves, chopped
2-3 tbsp pine nuts , toasted ( can use roasted sliced almonds )
Preparation:
- Wash the rice and soak in water for 20 minutes.
- Heat olive oil in a thick bottomed pan and add vermicelli and roast till golden brown. Make sure it doesn't get burned ..
- Then add drained rice and mix well.
- Add cinnamon powder and mix well for 2-3 minutes.
- Now add 4 cups of boiling water and salt and bring it to a boil.
- Then cook covered at low flame until rice is fully cooked.
- Remove from the flame and keep it covered for 5-10 minutes.
- Gently fluff the rice with a fork and serve garnished with parsley leaves and toasted pine nuts / sliced almonds...
