Ingredients:
1 cup plain flour
1/4 tsp baking powder
1/2 tsp salt
1 cup granulated sugar
1/2 cup unsalted butter
2 large eggs
zest of 2 lemons
1 tsp vanilla essence
2 -3 tsp lemon juice
For the Lemon Glaze:
1/2 cup icing sugar
1 tbsp lemon juice
1/4 tsp vanilla essence
Preparation:
- Preheat the oven to 180 degree celcius. Line a square baking pan with baking paper on all sides and keep it aside.
- In a large microwave - safe bowl, add the granulated sugar and lemon zest, rubbing the zest into the sugar using your fingers.
- Add the butter to this lemon sugar and microwave until the butter is fully melted, about 1 - 1 1/2 minutes.
- Then remove from the microwave and stir using a whisk.
- Add the eggs , lemon juice and vanilla essence and whisk well until the mixture becomes glossy and lightens in colour.
- Add the plain flour, baking powder and salt and fold together using a rubber spatula until just combined. Do not overmix.
- Transfer the batter into the prepared pan and spread evenly.
- Bake it in the preheated oven for 20-25 minutes until the edges are set and a skewer inserted at the centre of the brownie comes out clean.
- Remove from the oven and keep it aside to cool.
- To make the glaze, combine the icing sugar, lemon juice and vanilla essence in a small mixing bowl and whisk together until smooth.
- Pour the glaze over the cooled brownie, spreading evenly to the edges.
