Ingredients:


1 cup plain flour

1/4 tsp baking powder

1/2 tsp salt

1 cup granulated sugar

1/2 cup unsalted butter

2 large eggs

zest of 2 lemons

1 tsp vanilla essence

2 -3 tsp lemon juice


For the Lemon Glaze:


1/2 cup icing sugar

1 tbsp lemon juice

1/4 tsp vanilla essence


Preparation:


  1. Preheat the oven to 180 degree celcius. Line a square baking pan with baking paper on all sides and keep it aside.
  2. In a large microwave - safe bowl, add the granulated sugar and lemon zest, rubbing the zest into the sugar using your fingers.
  3. Add the butter to this lemon sugar and microwave until the butter is fully melted, about 1 - 1 1/2 minutes.
  4. Then remove from the microwave and stir using a whisk.
  5. Add the eggs , lemon juice and vanilla essence and whisk well until the mixture becomes glossy and lightens in colour.
  6. Add the plain flour, baking powder and salt and fold together using a rubber spatula until just combined. Do not overmix.
  7. Transfer the batter into the prepared pan and spread evenly.
  8. Bake it in the preheated oven for 20-25 minutes until the edges are set and a skewer inserted at the centre of the brownie comes out clean.
  9. Remove from the oven and keep it aside to cool.
  10. To make the glaze, combine the icing sugar, lemon juice and vanilla essence in a small mixing bowl and whisk together until smooth.
  11. Pour the glaze over the cooled brownie, spreading evenly to the edges.
