Lemon Dates Pickle

Ingredients:
12-15 small lemons / 5 large lemons
20 dates, pitted and chopped
1 tbsp ginger, thinly sliced
12 garlic cloves, sliced
4 green chillies, slit
2 sprig curry leaves
3-4 tbsp kashmiri chilli powder
3/4 tsp asafoetida
1/2 tsp fenugreek powder
1 tsp mustard seeds
1 1/2 cup boiling water
1/4 cup vinegar
salt to taste
1 1/2 tsp + 1 1/2 tsp sugar
3-4 tbsp gingely oil
Preparation:
- Steam the lemons for 12-15 minutes until they turn soft. Cool them completely and the cut each into pieces.
- Transfer to a bowl and add enough salt and 1 1/2 tsp sugar and mix well and keep it aside for 5 hours.
- In a bowl, mix chilli powder with little water to a paste and keep it aside.
- Heat oil in a pan and splutter mustard seeds.
- Add garlic, ginger, green chillies and curry leaves and saute well.
- Reduce the flame to low and add chilli powder paste and mix well.
- When oil separates, add asafoetida and fenugreek powder and saute for a minute.
- Add chopped dates to this and mix well. Add 1 1/2 cup of boiling water and mix well.
- Add lemon to this and mix well. ( Don't cook the lemon , it will taste bitter.)
- Add salt and vinegar and mix well. When it boils and starts to thicken , add 1 1/2 tsp sugar and mix well. Switch off the flame.
- Allow it to cool completely and store in an air tight glass container/ bottle... Keep refrigerated...
