Lemon Quinoa

Ingredients:


1/2 cup quinoa

1 cup water

2 tbsp onion, finely chopped

2 green chillies, finely chopped

1 tsp ginger, finely chopped

1 sprig curry leaves

1/2 tsp turmeric powder

1/2 tsp asafoetida powder

1 tbsp peanuts

1 tsp urad dal

1/2 tsp mustard seeds

salt to taste

1 tbsp coriander leaves, chopped

1 tbsp lemon juice

1 tbsp oil


Preparation:

  1. Wash the quinoa well and drain the water using strainer.
  2. In a pressure cooker, add drained quinoa and cook it adding 1 cup of water at high flame for 3 whistles.
  3. Open the cooker after 20 minutes and cool down for 10 minutes and then fluff using fork.
  4. Heat coconut oil in a pan and splutter mustard seeds.
  5. Add urad dal and peanuts and fry for a minute at medium flame.
  6. Add chopped onion, green chillies, ginger, curry leaves and saute till onion turns transparent.
  7. Add asafoetida and turmeric powder into this and mix well.
  8. Then add the cooked quinoa and salt and mix well and cook for 2-3 minutes.
  9. Add lemon juice and chopped coriander leaves and mix well for 2 minutes on low flame. Remove from the flame and serve hot…
