Lemon Quinoa

Ingredients:
1/2 cup quinoa
1 cup water
2 tbsp onion, finely chopped
2 green chillies, finely chopped
1 tsp ginger, finely chopped
1 sprig curry leaves
1/2 tsp turmeric powder
1/2 tsp asafoetida powder
1 tbsp peanuts
1 tsp urad dal
1/2 tsp mustard seeds
salt to taste
1 tbsp coriander leaves, chopped
1 tbsp lemon juice
1 tbsp oil
Preparation:
- Wash the quinoa well and drain the water using strainer.
- In a pressure cooker, add drained quinoa and cook it adding 1 cup of water at high flame for 3 whistles.
- Open the cooker after 20 minutes and cool down for 10 minutes and then fluff using fork.
- Heat coconut oil in a pan and splutter mustard seeds.
- Add urad dal and peanuts and fry for a minute at medium flame.
- Add chopped onion, green chillies, ginger, curry leaves and saute till onion turns transparent.
- Add asafoetida and turmeric powder into this and mix well.
- Then add the cooked quinoa and salt and mix well and cook for 2-3 minutes.
- Add lemon juice and chopped coriander leaves and mix well for 2 minutes on low flame. Remove from the flame and serve hot…
