Ingredients:
2 1/2 cup plain flour
2 tsp cornflour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
170 gm unsalted butter, melted
1/2 cup light brown sugar
1/2 cup granulated sugar
1 large egg
1 tsp vanilla essence
2 tsp lemon juice
1 1/2 -2 tbsp grated lemon zest
200 gm white chocolate chips
Preparation:
- Preheat oven to 180 degree celcius. Line a baking sheet with baking paper/ parchment paper.
- Add plain flour, cornflour, baking powder, baking soda and salt in a mixing bowl and stir together using a whisk.
- In a large mixing bowl or in the bowl of your electric mixer, add brown sugar, granulated sugar and melted butter and beat on medium speed, until well combined.
- Add the egg, vanilla essence, lemon juice and lemon zest and continue to beat until well combined.
- Add the flour mixture and mix on low speed until well combined and no streaks of flour remain.
- Add the white chocolate chips and mix on low speed until evenly distributed throughout the dough.
- Using a 1 1/2 tbsp cookie scoop, scoop the dough into balls and place them on the prepared baking sheet two inches apart.
- Top each dough ball with 2-3 chocolate chips.
- Bake in the preheated oven for 8-10 minutes until lightly golden at the edges.
- Remove from the oven and allow to cool for about 5 minutes on the baking sheet and then transfer to a wire rack to cool completely..........
