Little Millet Tomato Rice

Ingredients:

1 cup little millet

2 cups water

salt to taste

1 onion, finely chopped

2 tomatoes, chopped

1-2 green chillies, chopped

2 garlic cloves, crushed

1/4 tsp turmeric powder

1 tsp chilli powder

1/2 tsp coriander powder

1 sprig curry leaves

1/2 tsp mustard seeds

1 tsp urad dal

1/4 tsp cumin seeds

1 tbsp oil

Preparation:

  1. Wash and soak the little millet in water for 1 hour.
  2. Then pressure cook the drained millet adding 2 cups of water and little salt for 3 whistles.
  3. Once the pressure releases, open the cooker and fluff it gently using a fork and keep it aside.
  4. Heat oil in a pan and add mustard seeds. When it splutters, add cumin seeds, urad dal and curry leaves.
  5. Add chopped onion, green chillies and crushed garlic into this and saute well.
  6. Then add chopped tomato, turmeric powder, chilli powder, coriander powder and salt and mix well and allow to cook until tomatoes are soft, mushy and thick in consistency.
  7. When oil appears in the sides and top, add the cooked little millet and mix well and cook for 2-3 minutes on low flame. Remove from flame and serve hot…
