Little Millet Tomato Rice

Ingredients:
1 cup little millet
2 cups water
salt to taste
1 onion, finely chopped
2 tomatoes, chopped
1-2 green chillies, chopped
2 garlic cloves, crushed
1/4 tsp turmeric powder
1 tsp chilli powder
1/2 tsp coriander powder
1 sprig curry leaves
1/2 tsp mustard seeds
1 tsp urad dal
1/4 tsp cumin seeds
1 tbsp oil
Preparation:
- Wash and soak the little millet in water for 1 hour.
- Then pressure cook the drained millet adding 2 cups of water and little salt for 3 whistles.
- Once the pressure releases, open the cooker and fluff it gently using a fork and keep it aside.
- Heat oil in a pan and add mustard seeds. When it splutters, add cumin seeds, urad dal and curry leaves.
- Add chopped onion, green chillies and crushed garlic into this and saute well.
- Then add chopped tomato, turmeric powder, chilli powder, coriander powder and salt and mix well and allow to cook until tomatoes are soft, mushy and thick in consistency.
- When oil appears in the sides and top, add the cooked little millet and mix well and cook for 2-3 minutes on low flame. Remove from flame and serve hot…
