Ingredients:
2 medium raw mangoes / pacha manga
lemon sized tamarind
3 tbsp ginger, finely chopped
5-6 green chillies, finely chopped
1 tsp chilli powder
1/2 tsp turmeric powder
3-4 tbsp grated jaggery, or as required
1/4 tsp roasted fenugreek powder
a pinch of asafoetida
salt to taste
1 1/2 tbsp coconut oil
1 tsp mustard seeds
1 sprig curry leaves
2 dry red chillies
Preparation:
- Peel and grate the raw mangoes and keep it aside.
- Soak tamarind in 1 cup of water, extract its juice and keep it aside.
- Heat 1 tbsp coconut oil in a pan and add chopped ginger and green chillies and saute well. Switch off the flame.
- In a pan, add the grated mango, tamarind water, chilli powder, turmeric powder and salt and boil well at medium flame adding 3/4-1 cup of water till mango turns soft and well cooked.
- Reduce the flame to low and add fried ginger-green chillies and cook for 5 minutes, stirring in between.
- Add grated jaggery and mix well and boil well at low flame till it thickens.
- Adjust the salt and add fenugreek powder and asafoetida and mix well. Switch off the flame.
- Heat 2 tsp oil in a pan and splutter mustard seeds.
- Add dry red chillies and curry leaves and fry and add this to the puli inji and keep covered for 5 minutes.
- Let it cool and store it in an air tight container. Serve with rice, biriyani etc...
