Ingredients:
1 cup pumpkin pieces
2 drumsticks, cut into pieces
1 cup grated coconut
2 garlic cloves
1/4 tsp + 1/2 tsp turmeric powder
1/2 tsp cumin seeds
3-4 green chillies, slit
1 tsp ginger, sliced
1 tsp garlic, sliced
salt to taste
1 tsp mustard seeds
4 shallots, sliced
2 dry red chillies
1 sprig curry leaves
coconut oil, as required
Preparation:
- Peel and chop pumpkin and drumsticks into pieces.
- Grind grated coconut, 1/4 tsp turmeric powder, 2 garlic cloves and cumin seeds together to a paste adding little water and keep it aside.
- Heat 1- 1 1/2 tbsp coconut oil in a clay pot / pan and add pumpkin pieces, drumsticks, green chillies, ginger and garlic and saute.
- Add 1/2 tsp turmeric powder, salt and enough water and cook covered until the vegetables are well cooked.
- Then add the ground coconut paste and mix gently and cook on low flame for 2-3 minutes.
- Adjust the salt and switch off the flame.
- Heat 2 tsp coconut oil in a pan and splutter mustard seeds. Add sliced shallots, dry red chillies and curry leaves and fry until brown.
- Pour this tempering over the curry and mix well. Serve with rice..
