Ingredients:


1 cup pumpkin pieces

2 drumsticks, cut into pieces

1 cup grated coconut

2 garlic cloves

1/4 tsp + 1/2 tsp turmeric powder

1/2 tsp cumin seeds

3-4 green chillies, slit

1 tsp ginger, sliced

1 tsp garlic, sliced

salt to taste

1 tsp mustard seeds

4 shallots, sliced

2 dry red chillies

1 sprig curry leaves

coconut oil, as required


Preparation:


  1. Peel and chop pumpkin and drumsticks into pieces.
  2. Grind grated coconut, 1/4 tsp turmeric powder, 2 garlic cloves and cumin seeds together to a paste adding little water and keep it aside.
  3. Heat 1- 1 1/2 tbsp coconut oil in a clay pot / pan and add pumpkin pieces, drumsticks, green chillies, ginger and garlic and saute.
  4. Add 1/2 tsp turmeric powder, salt and enough water and cook covered until the vegetables are well cooked.
  5. Then add the ground coconut paste and mix gently and cook on low flame for 2-3 minutes.
  6. Adjust the salt and switch off the flame.
  7. Heat 2 tsp coconut oil in a pan and splutter mustard seeds. Add sliced shallots, dry red chillies and curry leaves and fry until brown.
  8. Pour this tempering over the curry and mix well. Serve with rice..
