Mathi Pori / Sardine Fry With Coconut

Ingredients:
300-350 gm sardines/ mathi, cleaned
1 1/2 tsp + 1/2 tsp chilli powder
3/4 tsp pepper powder
1/2 tsp fennel powder
1/4 tsp turmeric powder
10-12 shallots
1/2 cup grated coconut
1 tbsp crushed red chilli
1/2" piece ginger, crushed
5 garlic cloves, crushed
1 sprig curry leaves, chopped
3 tbsp tamarind juice
salt to taste
3-4 tbsp coconut oil
Preparation:
- Clean the sardines and make slits on both sides of the fish.
- In a bowl, add 1 1/2 tsp chilli powder, pepper powder, fennel powder, turmeric powder and salt and mix well.
- Add sardines to this and marinate well. Keep it in the fridge for 30 minutes.
- In a small blender, add shallots, grated coconut, crushed red chilli and 1/2 tsp chilli powder and just crush them together and keep it aside.
- Heat coconut oil in a pan at medium flame and place the marinated sardines and fry them on one side.
- Then turn to other side and add crushed ginger, garlic and curry leaves and fry till done.
- When both sides are fried well, add coconut mixture, tamarind juice and little salt and mix gently without breaking the fish.
- Then cook it covered for 2-3 minutes at medium-low flame. Garnish with curry leaves and serve hot...
