Mini Pistachio Puff Pastry Croissants

Ingredients:
2 puff pastry sheets, thawed
1/2 cup pistachio spread / cream, or as required ( I used store bought )
1 beaten egg, for brushing
icing sugar, for dusting
Preparation:
- Preheat the oven to 200 degree celcius. Grease a baking tray with oil or line it with aluminium foil/ parchment paper.
- Cut the puff pastry sheets into triangles as shown in this recipe.
- Spoon 1/2 tbsp of pistachio spread on the wide end of each puff pastry triangle.
- Then gently roll up the triangles from the wide end towards the narrow end and bend both edges inwards.
- Place them on the greased baking tray and brush with beaten egg.
- Bake in the preheated oven for 15-20 minutes or until the puffs turn golden and cooked.
- Allow to cool slightly and then dust with icing sugar and serve..
