Ingredients:
1 carrot ( 1/2 cup), chopped
1/2 cup padavalanga/ snake gourd, chopped
1/2 cup achinga payar / long beans, chopped
1/2 cup cabbage, chopped
4-5 green chillies, slit
1/2 tsp turmeric powder
3/4-1 tsp chilli powder
3/4 cup grated coconut
1 sprig curry leaves
1 tsp urad dal
1 tsp mustard seeds
salt to taste
2 tsp coconut oil
Preparation:
- Chop the vegetables into small pieces.
- Heat oil in a pan and splutter mustard seeds. Add urad dal and curry leaves and saute.
- Add chopped vegetables, green chillies, turmeric powder, chilli powder and salt and mix well.
- Sprinkle little water and cook covered at low flame, stirring in between.
- Add grated coconut and mix well for 2 minutes. Remove from the flame and serve with rice.....
