Ingredients:


1 carrot ( 1/2 cup), chopped

1/2 cup padavalanga/ snake gourd, chopped

1/2 cup achinga payar / long beans, chopped

1/2 cup cabbage, chopped

4-5 green chillies, slit

1/2 tsp turmeric powder

3/4-1 tsp chilli powder

3/4 cup grated coconut

1 sprig curry leaves

1 tsp urad dal

1 tsp mustard seeds

salt to taste

2 tsp coconut oil


Preparation:


  1. Chop the vegetables into small pieces.
  2. Heat oil in a pan and splutter mustard seeds. Add urad dal and curry leaves and saute.
  3. Add chopped vegetables, green chillies, turmeric powder, chilli powder and salt and mix well.
  4. Sprinkle little water and cook covered at low flame, stirring in between.
  5. Add grated coconut and mix well for 2 minutes. Remove from the flame and serve with rice.....
