Ingredients:


2 drumsticks / muringakka, chopped

3 medium tomatoes, chopped

10 + 5 shallots, sliced

4 garlic cloves, chopped

3 green chillies, slit

1 tsp chilli powder

1 tsp coriander powder

salt to taste

1 cup grated coconut

1/4 tsp turmeric powder

2 sprig curry leaves

1/2 tsp mustard seeds

3 dry red chillies

1 1/2 tbsp coconut oil


Preparation:


  1. In a pan, add chopped drumsticks, tomato, 10 sliced shallots, garlic, green chillies, few curry leaves, chilli powder, coriander powder, salt and 2 1/2 cup water and mix well and keep on high flame.
  2. When it starts to boil, cover and cook at medium flame for 12-15 minutes.
  3. Grind grated coconut with turmeric powder and 1/3 cup of water to a fine paste.
  4. Add this coconut paste and mix well and heat for 3-4 minutes and switch off the flame. Don't allow to boil.
  5. Heat coconut oil in a pan and splutter mustard seeds. Add dry red chillies, 5 sliced shallots and curry leaves and fry till golden brown.
  6. Add to the curry and keep covered for 10 minutes. Then mix well and serve with rice...
