Ingredients:
1 cup jeerakasala rice / kaima rice / jeeraga samba rice
200-250 gm mushrooms, quartered
4 green chillies
6 garlic cloves
2" ginger
1 cup coriander leaves
1/2 cup mint leaves
1 onion, finely chopped
1 tomato, chopped
1/4 tsp turmeric powder
1/2 tsp pepper powder
1/4 tsp cumin powder
1 tsp coriander powder
1 tsp garam masala
lemon juice of 1/2 lemon
salt to taste
1 bay leaf
2 cardamoms
1 star anise
4 cloves
1" piece cinnamon
2 tbsp ghee
Preparation:
- Wash the rice, drain it and keep it aside.
- Grind together green chillies, garlic, ginger, coriander leaves , mint leaves and 1/4 cup of water to a paste and keep it aside.
- Heat ghee in a thick bottomed pan and add bay leaf, cardamoms, star anise, cloves, cinnamon and chopped onion and saute well till soft.
- Add ground green paste and cook for 3-4 minutes till the raw smell goes.
- Add chopped tomato and cook for 2 minutes till soft.
- Add sliced mushrooms and salt and mix well and cook covered for 5-6 minutes.
- Add turmeric powder, pepper powder, cumin powder, coriander powder and garam masala and mix well.
- Add 1 1/2 cup of water and lemon juice and mix well. Adjust the salt.
- Add drained rice and mix well and cook covered at low flame till done.
- Once the rice is cooked, gently fluff up the rice with a fork or a wooden ladle and serve with raita and pickle...
