Mutta Kothu Idli / Kothu Idli with Egg

Ingredients:
5-7 idlis, crumbled
2 eggs, beaten
1 onion, finely chopped
1 tsp ginger, finely chopped
1 tsp garlic, finely chopped
2 green chillies, finely chopped
1/2 tsp turmeric powder
1 tsp chilli powder
3/4 tsp coriander powder
1 small tomato, chopped
3/4 tsp garam masala
2-3 tbsp spicy chicken gravy (optional: for extra taste)
1/2 tsp pepper powder
salt to taste
1/4 tsp fennel seeds
2 tbsp coriander leaves, chopped
1 tbsp oil
Preparation:
- Heat oil in a pan and add fennel seeds and stir for a few second until fragrant.
- Add chopped onion, ginger-garlic, green chillies, curry leaves and salt and saute for few minutes
- Add turmeric powder, chilli powder and coriander powder and mix until their raw smell is gone.
- Add chopped tomato and saute until soft and it gets mashed up.
- Add garam masala and mix well. Add 2-3 tbsp spicy chicken gravy and mix well.
- Add beaten eggs and little salt and scramble lightly.
- Add crumbled idli and mix well and cook for 2-3 minutes.
- Add pepper powder and chopped coriander leaves and mix well.
- Adjust the salt and switch off the flame. Serve hot...
