Ingredients:
3/4 kg mutton pieces
2 big onions, sliced
10 whole garlic cloves
1 tbsp kashmiri chilli powder
1 1/2 tsp coriander powder
1/4 tsp turmeric powder
1/2 tsp red chilli powder
1 big tomato, cut into half
2 tbsp thick yogurt, whisked
2 tbsp butter
1 tsp pepper powder
1/2 tsp garam masala
salt to taste
2 tbsp ginger, thinly sliced
3-4 green chillies, sliced
3 tbsp coriander leaves, chopped
slice of lemon
Preparation:
- In a pressure cooker, add cleaned mutton pieces, sliced onions, garlic cloves, kashmiri chilli powder, coriander powder, turmeric powder, red chilli powder and salt and mix well.
- Add 1/4 cup of water into this and mix well.
- Then keep 1 big tomato cut into half on top and cook covered for 1 whistle at high flame and 5-6 whistles or till well cooked at low flame.
- When the pressure releases, open the cooker and remove the peel of the cooked tomato.
- Then transfer this cooked mutton along with its gravy to a thick bottomed pan and and cook at medium-high flame, stirring in between.
- When 3/4th of the water dries up, add whisked yogurt and mix well immediately.
- Adjust the salt and boil well and when it starts to thickens, add butter, pepper powder and garam masala and mix well.
- Then cook at medium flame till the gravy thickens and the oil separates.
- Add thinly sliced ginger, green chillies and chopped coriander leaves and mix gently.
- Switch off the flame and allow to cool little.. Serve with a slice of lemon and squeeze it while serving...
