Ingredients:


1/2 kg mutton, cleaned

2 cups basmati rice

2 tsp heaped kashmiri chilli powder

1/2 tsp pepper powder

1/2 tsp turmeric powder

1 tsp coriander powder

1/2 tsp cumin powder

1/2 tsp garam masala

1 1/2 tsp ginger-garlic paste

1/2 cup yogurt

1 tbsp + 1 tbsp lemon juice

salt to taste

2 medium onions, thinly sliced

1 bay leaf

4 cardamoms

1" piece cinnamon

4-5 cloves

6-8 pepper corns

3 tbsp coriander leaves, chopped

3-4 whole green chillies

4-5 tbsp oil


Preparation:


  1. In a mixing bowl, add cleaned mutton pieces, kashmiri chilli powder, pepper powder, turmeric powder, coriander powder, cumin powder, garam masala, ginger-garlic paste, yogurt, 1 tbsp lemon juice and salt and mix everything well. Let it refrigerated for 30-60 minutes.
  2. Wash and soak basmati rice in water for 30 minutes.
  3. Heat a pressure cooker and add oil and fry the sliced onions over medium flame until light golden.
  4. Add bay leaf, cardamoms, cinnamon, cloves and pepper corns and saute.
  5. Add marinated mutton and mix well and cook over high flame for 5-8 minutes.
  6. Add chopped coriander leaves and mix well.
  7. Add 1 cup hot water and mix well and pressure cook until the mutton is done.
  8. Once the pressure releases, open the cooker and add the drained rice and mix well.
  9. Add 1 1/2 cup hot water , salt, 1 tbsp lemon juice and whole green chillies and cook over medium flame for 2 whistles.
  10. Switch off the flame and let it sit for10-15 minutes.
