Mutton Kurma ( Korma ) Pulao

Ingredients:
1/2 kg mutton, cleaned
2 cups basmati rice
2 tsp heaped kashmiri chilli powder
1/2 tsp pepper powder
1/2 tsp turmeric powder
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp garam masala
1 1/2 tsp ginger-garlic paste
1/2 cup yogurt
1 tbsp + 1 tbsp lemon juice
salt to taste
2 medium onions, thinly sliced
1 bay leaf
4 cardamoms
1" piece cinnamon
4-5 cloves
6-8 pepper corns
3 tbsp coriander leaves, chopped
3-4 whole green chillies
4-5 tbsp oil
Preparation:
- In a mixing bowl, add cleaned mutton pieces, kashmiri chilli powder, pepper powder, turmeric powder, coriander powder, cumin powder, garam masala, ginger-garlic paste, yogurt, 1 tbsp lemon juice and salt and mix everything well. Let it refrigerated for 30-60 minutes.
- Wash and soak basmati rice in water for 30 minutes.
- Heat a pressure cooker and add oil and fry the sliced onions over medium flame until light golden.
- Add bay leaf, cardamoms, cinnamon, cloves and pepper corns and saute.
- Add marinated mutton and mix well and cook over high flame for 5-8 minutes.
- Add chopped coriander leaves and mix well.
- Add 1 cup hot water and mix well and pressure cook until the mutton is done.
- Once the pressure releases, open the cooker and add the drained rice and mix well.
- Add 1 1/2 cup hot water , salt, 1 tbsp lemon juice and whole green chillies and cook over medium flame for 2 whistles.
- Switch off the flame and let it sit for10-15 minutes.
- Open the lid and transfer the rice to a serving bowl and serve with raita, pickle...
