Mutton / Lamb Shank Roast

Ingredients:
4-5 mutton / lamb shanks, cleaned
1/2 tsp turmeric powder
salt to taste
2 tbsp oil
2 onions, finely chopped
1 tbsp ginger, chopped
1 tbsp garlic, chopped
2 green chillies, chopped
1 tomato, chopped
1/2 tbsp coriander powder
1 tbsp chilli powder
1 tsp cumin powder
1 tsp pepper powder
1 tsp garam masala
1 tbsp tomato sauce
1/2 tbsp soy sauce
1 sprig curry leaves
1 tsp kasuri methi
2 tbsp coriander leaves, chopped
Preparation:
- In a pressure cooker, add mutton shanks and pressure cook it about 80 % adding turmeric powder, salt and enough water.
- Heat oil in a pan and add chopped onions, ginger, garlic and green chillies and saute well.
- Add chopped tomato and saute well.
- Add coriander powder, chilli powder, cumin powder, pepper powder and garam masala and saute well till the raw smell goes.
- Add tomato sauce, soy sauce, curry leaves and kasuri methi and mix well.
- Then add cooked mutton shanks and its stock and mix well. Adjust the salt.
- Cook until the meat is softened and well cooked and roast well till dark in colour.
- Garnish with coriander leaves and serve hot...
