Mutton / Lamb Shank Roast

Ingredients:


4-5 mutton / lamb shanks, cleaned

1/2 tsp turmeric powder

salt to taste

2 tbsp oil

2 onions, finely chopped

1 tbsp ginger, chopped

1 tbsp garlic, chopped

2 green chillies, chopped

1 tomato, chopped

1/2 tbsp coriander powder

1 tbsp chilli powder

1 tsp cumin powder

1 tsp pepper powder

1 tsp garam masala

1 tbsp tomato sauce

1/2 tbsp soy sauce

1 sprig curry leaves

1 tsp kasuri methi

2 tbsp coriander leaves, chopped


Preparation:


  1. In a pressure cooker, add mutton shanks and pressure cook it about 80 % adding turmeric powder, salt and enough water.
  2. Heat oil in a pan and add chopped onions, ginger, garlic and green chillies and saute well.
  3. Add chopped tomato and saute well.
  4. Add coriander powder, chilli powder, cumin powder, pepper powder and garam masala and saute well till the raw smell goes.
  5. Add tomato sauce, soy sauce, curry leaves and kasuri methi and mix well.
  6. Then add cooked mutton shanks and its stock and mix well. Adjust the salt.
  7. Cook until the meat is softened and well cooked and roast well till dark in colour.
  8. Garnish with coriander leaves and serve hot...
