Nadan Vellarikka Curry / Yellow Cucumber Curry

A delicious Kerala-style curry made with yellow cucumber and coconut, served hot with rice.

Ingredients:

1/2 kg vellarikka / yellow cucumber

1 cup grated coconut

1/2 tsp cumin seeds

6-7 shallots

2 green chillies, slit

3/4 tsp turmeric powder

1 tsp chilli powder

2 dry red chillies

1 sprig curry leaves

salt to taste

1 1/2 tbsp coconut oil

Preparation:

  1. Peel off the skin of vellarikka, remove its seeds and cut it into cubes.
  2. Grind together grated coconut, 1/2 tsp cumin seeds and 4 shallots to a smooth paste adding 1/2 cup of water and keep it aside.
  3. In a claypot / pan, add cubed vellarikka, slit green chillies, turmeric powder, chilli powder, salt and cook it covered adding about 2 cups of water at medium flame till done.
  4. Add the ground coconut paste to this and mix well. Adjust the water and salt.
  5. When it starts to boil, switch off the flame.
  6. Heat coconut oil in a small pan and splutter mustard seeds.
  7. Add 3-4 sliced shallots, 2 dry red chillies and curry leaves and fry till brown.
  8. Pour this seasoning over the curry and mix well.. Serve hot with rice..
