Ingredients:


1 cup plain flour

1 tsp baking powder

1/4 tsp salt

3 eggs, at room temperature

3/4 cup sugar

1 1/2 tbsp orange zest

1 tbsp honey

115 gm ( 1/2 cup ) unsalted butter, melted and cooled


Preparation:


  1. Sift together plain flour, baking powder and salt into a bowl, mix and keep it aside.
  2. In another bowl, add the eggs and sugar and whisk well until the mixture is pale yellow in colour.
  3. Add orange zest and honey and mix well.
  4. Add the flour mixture and mix gently until just combined.
  5. Then slowly add in butter and gently mix until it has been completely incorporated.
  6. Cover and refrigerate the batter for 30-60 minutes.
  7. Preheat the oven to 180 degree celcius. Grease / spray the madeleine pan with butter / baking spray.
  8. Spoon the batter into the madeleine pan, filling the moulds 3/4th full. No need to spread it to the edges, it will spread out by itself.
  9. Bake in the preheated oven for 10-12 minutes until slightly golden around edges.
  10. Remove from the oven, leave to cool slightly, and then turn out on to a wire rack and leave to cool completely.
