Ingredients:
1 cup plain flour
1 tsp baking powder
1/4 tsp salt
3 eggs, at room temperature
3/4 cup sugar
1 1/2 tbsp orange zest
1 tbsp honey
115 gm ( 1/2 cup ) unsalted butter, melted and cooled
Preparation:
- Sift together plain flour, baking powder and salt into a bowl, mix and keep it aside.
- In another bowl, add the eggs and sugar and whisk well until the mixture is pale yellow in colour.
- Add orange zest and honey and mix well.
- Add the flour mixture and mix gently until just combined.
- Then slowly add in butter and gently mix until it has been completely incorporated.
- Cover and refrigerate the batter for 30-60 minutes.
- Preheat the oven to 180 degree celcius. Grease / spray the madeleine pan with butter / baking spray.
- Spoon the batter into the madeleine pan, filling the moulds 3/4th full. No need to spread it to the edges, it will spread out by itself.
- Bake in the preheated oven for 10-12 minutes until slightly golden around edges.
- Remove from the oven, leave to cool slightly, and then turn out on to a wire rack and leave to cool completely.
