Ingredients:
2 cup snake gourd / padavalanga, chopped into small pieces
1/4 cup red gram / vanpayar
3-4 green chillies, slit
1 cup coconut milk
1-2 sprig curry leaves
salt to taste
1 tbsp coconut oil
Preparation:
- Soak the red gram in water overnight and pressure cook it for 3-4 whistles adding enough water and salt. Drain the water and keep it aside.
- In a cooker, add the chopped snake gourd, green chillies, salt and enough water and cook for 1 whistle.
- Open the cooker and add the cooked red gram and mix well for 1-2 minutes.
- Now add the coconut milk and cook on low flame for 5-6 minutes and switch off the flame. Don't allow to boil.
- Add curry leaves and drizzle coconut oil. Switch off the flame and let it rest for 10 minutes...Serve with rice...
