Ingredients:


1 1/2 cup basmati rice

200 gm paneer cubes

2 cups spinach, chopped

1 big onion, chopped

1 1/2 tsp garlic, finely chopped

1 1/2 tsp ginger, finely chopped

2-3 green chillies, chopped

1 sprig curry leaves

1/4 tsp turmeric powder

1 tsp chilli powder

1 tsp coriander powder

salt to taste

1/2 tsp mustard seeds

2-3 tbsp ghee


Preparation:


  1. Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool completely.
  2. Heat ghee in a pan and fry the paneer cubes till light brown on both sides and keep it aside.
  3. In the same pan, splutter mustard seeds and add curry leaves.
  4. Add chopped ginger, garlic and green chillies and saute.
  5. Add chopped onion and a pinch of salt and saute until onion is transparent.
  6. Add turmeric powder, chilli powder and coriander powder and saute for a minute.
  7. Add chopped spinach and little salt and saute for 5 minutes.
  8. Add cooked rice and fried paneer and mix gently and cook for 3-4 minutes on low flame till the rice heated up well.
  9. Remove from the flame and serve hot with raita and pickle….
