Ingredients:
1 1/2 cup basmati rice
200 gm paneer cubes
2 cups spinach, chopped
1 big onion, chopped
1 1/2 tsp garlic, finely chopped
1 1/2 tsp ginger, finely chopped
2-3 green chillies, chopped
1 sprig curry leaves
1/4 tsp turmeric powder
1 tsp chilli powder
1 tsp coriander powder
salt to taste
1/2 tsp mustard seeds
2-3 tbsp ghee
Preparation:
- Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool completely.
- Heat ghee in a pan and fry the paneer cubes till light brown on both sides and keep it aside.
- In the same pan, splutter mustard seeds and add curry leaves.
- Add chopped ginger, garlic and green chillies and saute.
- Add chopped onion and a pinch of salt and saute until onion is transparent.
- Add turmeric powder, chilli powder and coriander powder and saute for a minute.
- Add chopped spinach and little salt and saute for 5 minutes.
- Add cooked rice and fried paneer and mix gently and cook for 3-4 minutes on low flame till the rice heated up well.
- Remove from the flame and serve hot with raita and pickle….
