Ingredients:
1 small / 2 cup raw papaya, peeled and cut into medium cubes
1/2 tsp chilli powder
1/4 tsp turmeric powder
1 cup grated coconut
1/4 tsp cumin seeds
2 garlic cloves
1-2 green chillies
salt to taste
1 tsp mustard seeds
2 dry red chillies
3 shallots, sliced
1 sprig curry leaves
1 tbsp coconut oil
Preparation:
- Peel and chop the raw papaya into medium cubes.
- Grind the grated coconut with cumin seeds, garlic and green chilli to a smooth paste adding little water.
- In a pressure cooker, add the chopped papaya, turmeric powder, chilli powder, salt and about 1 1/2 cup of water and cook for 2 whistles or until done.
- Open the cooker and lightly mash the papaya pieces.
- Add the ground coconut paste and mix well.
- Add hot water if required and cook for a minutes over low-medium flame until the raw taste is gone
- Adjust the salt and switch off the flame.
- Heat oil in a small pan and splutter mustard seeds. Add 2-3 sliced shallots and dry red chillies and fry until brown.
- Add curry leaves and fry for few seconds and switch off the flame.
- Pour this over the curry and keep it covered for 10 minutes. Mix gently and serve with rice...
