Pavakka - Manga Curry / Bitter Gourd - Mango Curry

Ingredients:

1 bitter gourd / pavakka / kaipakka

2 green chillies, chopped

1/2 tsp turmeric powder

1 raw mango, peeled and chopped

1/2 tsp chilli powder

1 tbsp coriander powder

1 cup grated coconut

salt to taste

1/2 tsp mustard seeds

2 dry red chillies

1 sprig curry leaves

1 tbsp coconut oil

Preparation:

  1. Chop the bitter gourd into small pieces. Grind the grated coconut to a paste and keep it aside.
  2. In a pan, add chopped bitter gourd, green chillies, turmeric powder and salt and cook covered adding enough water.
  3. Add mango pieces, chilli powder and coriander powder into this and cook till done.
  4. Then add ground coconut paste and mix well and allow to boil well till the raw smell goes. Switch off the flame.
  5. Heat coconut oil in a pan and splutter mustard seeds. Add dry red chillies and curry leaves.
  6. Pour this over the curry and mix well. Serve hot…
