Ingredients:
1 kg chicken, cleaned
3 medium onions, chopped
2 tomatoes, chopped
1 tbsp garlic, chopped
1 tbsp ginger, chopped
4 green chillies, slit
2 sprig curry leaves
2 tbsp coriander powder
2 tbsp pepper powder
1/2 tsp turmeric powder
2 cups thin coconut milk
3/4 tsp garam masala
1/2 cup thick coconut milk
4 shallots, sliced
salt to taste
oil, as required
Preparation:
- Heat 2-3 tbsp oil in a pan and add chopped garlic, ginger, green chillies and curry leaves and saute well.
- Add chopped onions and little salt and saute well till it turns brown.
- Reduce the flame and add coriander powder, turmeric powder and pepper powder and mix well till raw smell goes.
- Add chopped tomatoes to this and mix well till soft.
- Add cleaned chicken pieces and mix well.
- Add thin coconut milk and salt , mix well and cook covered till done.
- Then add garam masala and mix well.
- When the gravy starts to thicken, add thick coconut milk and mix well for 2-3 minutes. Don't allow it to boil.
- Heat 1 tbsp oil in a pan and add sliced shallots and curry leaves and fry till brown.
- Add this to the curry and mix well. Garnish with chopped coriander leaves and serve hot...
