Ingredients:


150 gm pepperoni slices

1 cup basmati rice

2 tsp garlic, finely chopped

1 small onion, finely chopped

2 green chillies, chopped

1/2 cup carrot, finely chopped

1/2 cup capsicum, finely chopped

salt to taste

1/2 tsp pepper powder

2 tsp soy sauce

1 1/2 - 2 tbsp oil

2 tbsp spring onions, chopped


Preparation:


  1. Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool completely.
  2. Heat oil in a pan and fry the pepperoni slices till brown and keep it aside.
  3. In the same pan, add chopped garlic and onion and saute.
  4. Add chopped carrot, capsicum, green chillies and salt and saute for 2 minutes. Don't overcook the vegetables.
  5. Add soy sauce and pepper powder and mix well.
  6. Add cooked rice and fried pepperoni and mix for 3-4 minutes till well combined.
  7. Garnish with chopped spring onion and mix well and remove from the flame. Serve hot..
