Ingredients:
150 gm pepperoni slices
1 cup basmati rice
2 tsp garlic, finely chopped
1 small onion, finely chopped
2 green chillies, chopped
1/2 cup carrot, finely chopped
1/2 cup capsicum, finely chopped
salt to taste
1/2 tsp pepper powder
2 tsp soy sauce
1 1/2 - 2 tbsp oil
2 tbsp spring onions, chopped
Preparation:
- Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool completely.
- Heat oil in a pan and fry the pepperoni slices till brown and keep it aside.
- In the same pan, add chopped garlic and onion and saute.
- Add chopped carrot, capsicum, green chillies and salt and saute for 2 minutes. Don't overcook the vegetables.
- Add soy sauce and pepper powder and mix well.
- Add cooked rice and fried pepperoni and mix for 3-4 minutes till well combined.
- Garnish with chopped spring onion and mix well and remove from the flame. Serve hot..
