Persimmon Walnut Bread

Ingredients:
1 cup persimmon puree ( from 2-3 ripe persimmons)
1 3/4 cup plain flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon powder
1/2 tsp ground ginger
1/2 tsp nutmeg powder
1 cup sugar
1/2 cup unsalted butter, melted
2 large eggs
1 tsp vanilla essence
1/2 cup walnuts, chopped
Preparation:
- Preheat the oven to 180°C. Grease a loaf pan with butter or spray with cooking spray (or line with baking paper).
- In a bowl, add plain flour, baking powder, baking soda, salt, cinnamon powder, ground ginger and nutmeg powder and whisk together and keep it aside.
- In another large bowl, add persimmon puree, sugar, butter, eggs and vanilla essence and mix until smooth and well combined.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- Fold in the walnuts and then transfer the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for about 55-60 minutes or until a toothpick inserted the centre comes out clean.
- Cool for 10 minutes, then turn out onto a wire rack to cool completely... Then slice the bread and serve...
