Pineapple Raita

Ingredients:

1 cup fresh pineapple, chopped into small pieces or cubes

1 tbsp sugar

1 1/2 cup thick yogurt

1/2 cup pomegranate seeds

2 tbsp coriander leaves, finely chopped

1/2 tsp cumin powder

1/4 tsp pepper powder

salt to taste

a pinch of chilli powder

Preparation:

  1. Boil 1 cup of water in a pan and add sugar and pineapple pieces and cook on medium flame for 4-5 minutes.
  2. Remove from the flame and strain the pineapple pieces and keep it aside to cool to room temperature.
  3. In a mixing bowl, add thick yogurt and whisk well until creamy and smooth.
  4. Then add the cooled pineapple pieces, pomegranate seeds, chopped coriander leaves, cumin powder, pepper powder and salt and mix well.
  5. Refrigerate the prepared raita until ready to serve...
  6. Serve garnished with few pomegranate seeds, chopped coriander leaves and a pinch of chilli powder...
