Pineapple Raita

Ingredients:
1 cup fresh pineapple, chopped into small pieces or cubes
1 tbsp sugar
1 1/2 cup thick yogurt
1/2 cup pomegranate seeds
2 tbsp coriander leaves, finely chopped
1/2 tsp cumin powder
1/4 tsp pepper powder
salt to taste
a pinch of chilli powder
Preparation:
- Boil 1 cup of water in a pan and add sugar and pineapple pieces and cook on medium flame for 4-5 minutes.
- Remove from the flame and strain the pineapple pieces and keep it aside to cool to room temperature.
- In a mixing bowl, add thick yogurt and whisk well until creamy and smooth.
- Then add the cooled pineapple pieces, pomegranate seeds, chopped coriander leaves, cumin powder, pepper powder and salt and mix well.
- Refrigerate the prepared raita until ready to serve...
- Serve garnished with few pomegranate seeds, chopped coriander leaves and a pinch of chilli powder...
