Prawns Fried Rice

Ingredients:
2 cups basmati rice
250 gm cleaned prawns
1 tsp chilli powder
1 tsp + 1 tsp pepper powder
3/4 tsp ginger-garlic paste
salt to taste
1 tbsp garlic, finely chopped
1 small onion, finely chopped
1/2 cup cabbage, finely chopped
1/2 cup carrot, finely chopped
3-4 beans, finely chopped
1/2 cup capsicum, finely chopped
1/2 tsp sugar
1 tbsp soy sauce
oil, as required
2 tbsp spring onions, chopped
Preparation:
- Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool.
- Clean the prawns and marinate it with chilli powder, 1 tsp pepper powder, ginger-garlic paste and salt and keep it aside for 10 minutes.
- Heat little oil in a pan and fry the marinated prawns and keep it aside.
- In the same pan, add chopped garlic and onion and saute.
- Add chopped cabbage, carrot, beans, capsicum and salt and saute for 2 minutes. Don't overcook the vegetables.
- Add 1 tsp pepper powder and sugar and mix well.
- Add soy sauce into this and mix well.
- Add cooked rice and fried prawns and mix gently on low flame till well combined.
- Heat it on low flame for about 4-5 minutes. Garnish with spring onion and remove from flame and serve hot...
