Pressure Cooker Chicken Varattiyathu

Ingredients:
600-700 gm chicken
2 onions, thinly sliced
oil, for frying onion
1 1/2 tbsp chilli powder
1/2 tsp turmeric powder
1 1/2 tsp pepper powder
1 tbsp ginger-garlic paste
1/4 tsp garam masala (optional)
few curry leaves
2 tsp lemon juice
salt to taste
2 tbsp oil
Preparation:
- Cut the chicken into pieces, clean it and keep it aside.
- Fry the thinly sliced onions in the oil till golden and keep it aside.
- In a bowl, add cleaned chicken pieces, chilli powder, turmeric powder, pepper powder, ginger-garlic paste, garam masala, lemon juice, salt and curry leaves and mix well with hand.
- Add fried onions crushed with hand to the marinated chicken and mix well. Keep it aside for 1/2 an hour.
- Heat 2 tbsp coconut oil in a pressure cooker and add marinated chicken and saute for 2 minutes at high flame.
- Add 1/2 cup of water (add water to the chicken marinated bowl and add this) and mix well and cook covered for 2 whistles.
- Switch off the flame and once the pressure releases, open the cooker and mix well.
- Keep it covered for few minutes and then serve ....

- 3In a bowl, mix chicken with chilli powder, turmeric powder, pepper powder, ginger-garlic paste, garam masala, lemon juice, salt, and curry leaves.
- 4Crush the fried onions and mix them with the marinated chicken. Let it rest for 30 minutes.
- 5Heat 2 tbsp coconut oil in a pressure cooker, add marinated chicken, and sauté for 2 minutes on high flame.
- 6Add 1/2 cup of water (from the marinade bowl), mix well, and cook covered for 2 whistles.
- 7Once the pressure releases, open the cooker, mix well, and serve.
