Ingredients:
300 gm pasta
200 gm boneless chicken, cut into small cubes
1 cup pumpkin pieces
6 garlic cloves
2 tbsp unsalted butter
1/2 chicken stock cube
1/2 tsp + 1 tsp pepper powder
1 tsp chilli flakes
1 tsp oregano
3-4 tbsp fresh cream
1/4 cup grated cheese
salt to taste
olive oil, as required
Preparation:
- Heat 1 tbsp olive oil in a pan and add garlic and pumpkin pieces and saute for 3 minutes.
- Then add salt and 1 cup of water and cook until it turns soft. Remove from the flame and when it cools, grind to a smooth paste and keep it aside.
- Heat 1 tbsp oil in a pan and add chicken pieces, 1/2 tsp pepper powder and salt and saute well till the chicken pieces are cooked. Keep it aside.
- Boil water in a large pan and add pasta, 1 tbsp oil and salt and cook for 8-10 minutes or according to the package instructions. Drain the pasta and keep it aside.
- Heat butter in a thick bottomed pan and add pumpkin paste, 1 cup pasta cooked water and chicken stock cube and mix well.
- Add oregano, chilli flakes, 1 tsp pepper powder, salt and cream and mix well and cook until it thickens.
- Then add cooked chicken pieces and mix well.
- Add cooked pasta into this and mix till well combined.
- Add grated cheese and parsley leaves / coriander leaves, mix well and switch off the flame...Serve hot…
