Ingredients:


300 gm pasta

200 gm boneless chicken, cut into small cubes

1 cup pumpkin pieces

6 garlic cloves

2 tbsp unsalted butter

1/2 chicken stock cube

1/2 tsp + 1 tsp pepper powder

1 tsp chilli flakes

1 tsp oregano

3-4 tbsp fresh cream

1/4 cup grated cheese

salt to taste

olive oil, as required


Preparation:


  1. Heat 1 tbsp olive oil in a pan and add garlic and pumpkin pieces and saute for 3 minutes.
  2. Then add salt and 1 cup of water and cook until it turns soft. Remove from the flame and when it cools, grind to a smooth paste and keep it aside.
  3. Heat 1 tbsp oil in a pan and add chicken pieces, 1/2 tsp pepper powder and salt and saute well till the chicken pieces are cooked. Keep it aside.
  4. Boil water in a large pan and add pasta, 1 tbsp oil and salt and cook for 8-10 minutes or according to the package instructions. Drain the pasta and keep it aside.
  5. Heat butter in a thick bottomed pan and add pumpkin paste, 1 cup pasta cooked water and chicken stock cube and mix well.
  6. Add oregano, chilli flakes, 1 tsp pepper powder, salt and cream and mix well and cook until it thickens.
  7. Then add cooked chicken pieces and mix well.
  8. Add cooked pasta into this and mix till well combined.
  9. Add grated cheese and parsley leaves / coriander leaves, mix well and switch off the flame...Serve hot…
