Ingredients:
4 cups pumpkin leaves / mathanila, chopped
2 eggs, beaten
3/4 cup grated coconut
1/2 onion, sliced
2-3 green chillies, chopped
1/4 tsp turmeric powder
1 sprig curry leaves
6 shallots, sliced
salt to taste
1/4 tsp mustard seeds
2 tbsp coconut oil
Preparation:
- In a bowl, add chopped pumpkin leaves, grated coconut, sliced onion, green chillies, turmeric powder and salt and mix well with hand.
- Heat coconut oil in a pan and splutter mustard seeds.
- Add curry leaves and sliced shallots and saute well at low flame.
- Add pumpkin leaves - coconut mixture and mix well and cook for 4 minutes at low-medium flame, stirring occasionally.
- Then move everything to side of the pan and add the beaten eggs and a pinch of salt and scramble/ stir continuously till the eggs are well cooked and dry.
- Mix everything well and cook for another 1-2 minutes. Serve hot with rice..
