Pumpkin Muffins

Ingredients:
1 2/3 cup plain flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
1/2-3/4 tsp mixed spice powder
1/4 tsp salt
2 eggs
3/4 cup sugar
1/2 cup brown sugar
1/2 cup oil
1 1/4 cup pumpkin puree
1/2 cup milk
Preparation:
- Preheat the oven to 180 degree celcius. Line a 12 hole cupcake tin with paper cases.
- In a large bowl, whisk together plain flour, baking soda, baking powder, ground cinnamon, mixed spice powder and salt.
- In another bowl, whisk together eggs, sugar and brown sugar until combined.
- Add oil to this and mix until combined.
- Add pumpkin puree and milk and mix until combined.
- Pour this pumpkin mixture into the flour mixture and mix gently until just combined.
- Divide the batter between the paper cases and then bake for 15-20 minutes until golden or until a toothpick inserted comes out clean.
- Transfer the muffins to a wire rack and leave to cool completely...
