Pumpkin Muffins

Ingredients:

1 2/3 cup plain flour

1 tsp baking soda

1/2 tsp baking powder

1 tsp ground cinnamon

1/2-3/4 tsp mixed spice powder

1/4 tsp salt

2 eggs

3/4 cup sugar

1/2 cup brown sugar

1/2 cup oil

1 1/4 cup pumpkin puree

1/2 cup milk

Preparation:

  1. Preheat the oven to 180 degree celcius. Line a 12 hole cupcake tin with paper cases.
  2. In a large bowl, whisk together plain flour, baking soda, baking powder, ground cinnamon, mixed spice powder and salt.
  3. In another bowl, whisk together eggs, sugar and brown sugar until combined.
  4. Add oil to this and mix until combined.
  5. Add pumpkin puree and milk and mix until combined.
  6. Pour this pumpkin mixture into the flour mixture and mix gently until just combined.
  7. Divide the batter between the paper cases and then bake for 15-20 minutes until golden or until a toothpick inserted comes out clean.
  8. Transfer the muffins to a wire rack and leave to cool completely...
