Ingredients:
1 1/4 cup plain flour
2 tbsp sugar
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon powder
1/2 tsp mixed spice powder
1 cup milk
6 tbsp pumpkin puree
2 tbsp melted butter
1 egg
Preparation:
- In a bowl, add plain flour, sugar, baking powder, salt, cinnamon powder and mixed spice powder and whisk well.
- In another bowl, add milk, pumpkin puree, egg and melted butter and stir together.
- Add the wet mixture into the dry ingredients and fold in until combined.
- Heat a frying pan or griddle over medium heat and lightly brush the pan with melted butter /oil or cooking spray.
- Pour about 1/4 cup of prepared batter onto the hot pan using a small ladle.
- When bubbles starts to appear on the surface of the pancake (2-3 minutes), flip over and cook it for 2-3 minutes on the other side.
- Repeat with remaining batter, brushing the pan with melted butter or oil.
- Transfer to a plate and serve with maple syrup or honey..
- You can use tinned pumpkin puree or steam cook the pumpkin pieces and make it to a smooth puree and then use....
- Instead of mixed spice powder, you can use 1/2 tsp ground ginger, 1/8 tsp nutmeg powder and a pinch of ground cloves...
