Ingredients:

1 1/4 cup plain flour

2 tbsp sugar

2 tsp baking powder

1/4 tsp salt

1/2 tsp cinnamon powder

1/2 tsp mixed spice powder

1 cup milk

6 tbsp pumpkin puree

2 tbsp melted butter

1 egg

Preparation:

  1. In a bowl, add plain flour, sugar, baking powder, salt, cinnamon powder and mixed spice powder and whisk well.
  2. In another bowl, add milk, pumpkin puree, egg and melted butter and stir together.
  3. Add the wet mixture into the dry ingredients and fold in until combined.
  4. Heat a frying pan or griddle over medium heat and lightly brush the pan with melted butter /oil or cooking spray.
  5. Pour about 1/4 cup of prepared batter onto the hot pan using a small ladle.
  6. When bubbles starts to appear on the surface of the pancake (2-3 minutes), flip over and cook it for 2-3 minutes on the other side.
  7. Repeat with remaining batter, brushing the pan with melted butter or oil.
  8. Transfer to a plate and serve with maple syrup or honey..
  • You can use tinned pumpkin puree or steam cook the pumpkin pieces and make it to a smooth puree and then use....
  • Instead of mixed spice powder, you can use 1/2 tsp ground ginger, 1/8 tsp nutmeg powder and a pinch of ground cloves...
