Pumpkin - Tomato Pachadi / Mathanga Thakkali Pachadi

Ingredients:
2 cups pumpkin/ mathanga, peeled and chopped
2 tomato, chopped
2 green chillies, chopped
1 1/2 tsp ginger, finely chopped
1/2 tsp chilli powder
1/4 tsp turmeric powder
salt to taste
1 - 1 1/2 cup yogurt
1 tsp sugar
1 tsp mustard seeds
4 shallots, sliced
2 dry red chillies
1 sprig curry leaves
Preparation:
- In a pan, add chopped pumpkin, tomato, green chillies, ginger, chilli powder, turmeric powder and salt and cook it adding 1 cup of water. Don't overcook the pumpkin.
- Remove it from the flame and keep it aside to cool.
- Then add yogurt and mix well. Add sugar into this and mix well. Adjust the salt.
- Heat 1 1/2 tbsp coconut oil in a pan and splutter mustard seeds.
- Add sliced shallots, dry red chillies and curry leaves and fry till golden brown.
