Ingredients:
1/2 cup quinoa
1/2 cup moong dal
1 onion, chopped
1 tomato, chopped
2 green chillies, slit
1 tsp ginger-garlic paste
1 carrot, chopped
10 beans, chopped
1/2 tsp turmeric powder
3 cloves
2 cardamoms
1 piece cinnamon
1/4 tsp mustard seeds
1 sprig curry leaves
1/2 tsp urad dal
1/2 tsp chana dal
2 tbsp coriander leaves, chopped
salt to taste
1 tbsp lemon juice
3 tbsp ghee
Preparation:
- Wash and soak quinoa and moong dal in separate bowls for 30 minutes.
- Heat ghee in a pressure cooker and add cloves, cardamoms, cinnamon, mustard seeds, urad dal and chana dal.
- Once it splutters, add curry leaves, slit green chillies, ginger-garlic paste, chopped onion and tomato and saute well until the tomato turns soft.
- Add chopped carrot and beans and mix well.
- Add the drained quinoa, moong dal, turmeric powder and salt and mix well.
- Add 3 cups of water and stir everything together and bring to a boil.
- Then cook covered for 3 whistles and let it rest for 10 minutes.
- Open the lid and add chopped coriander leaves. Then squeeze in some fresh lemon juice and mix well and serve...
