Ingredients:
1 cup cooked white chickpeas / canned chickpeas
1 cup cucumber, chopped
1 apple, chopped
1/2 cup mango, peeled and chopped
1/2 cup lettuce, chopped
1/2 cup parsley leaves, chopped
5-6 cherry tomatoes, chopped
1/2 cup carrot, chopped
1/2 cup pomegranate arils / seeds
For the dressing:
2 tbsp olive oil
1-2 tbsp lemon juice
1 tbsp honey
1/4-1/2 tsp freshly ground pepper
salt to taste
Preparation:
- Prepare the salad dressing by mixing pepper powder, salt, olive oil, honey and lemon juice in a small bowl.
- In a mixing bowl, add chopped lettuce, parsley leaves, apple, mango, cucumber, cherry tomatoes, carrot, chickpeas and pomegranates and mix well.
- Then add the salad dressing and toss until well combined. Transfer to a plate and then serve...
