Ingredients:
1 cup basmati rice
250 gm paneer cubes
1 can ( about 1 cup ) rajma / kidney beans
1 onion, sliced
1 tsp ginger, chopped
1 tsp garlic, chopped
1 medium tomato, sliced
3 green chillies, slit
1 tsp turmeric powder
2 tsp chilli powder
1 tsp coriander powder
1 tsp cumin powder
salt to taste
1 tsp cumin seeds
3 cloves
2 bay leaves
2 tbsp coriander leaves, chopped
2 tbsp ghee
Preparation:
- Wash the rice, drain it and keep it aside.
- Heat ghee in a thick bottomed pan and add cumin seeds, cloves and bay leaves and saute well.
- Add chopped ginger and garlic and saute until the raw smell goes.
- Add sliced onion and saute well till onion turns soft and golden.
- Add sliced tomato and green chillies and saute well till tomatoes turn soft and mushy.
- Reduce the flame to low, add turmeric powder, chilli powder, coriander powder, cumin powder and salt and mix well.
- Then add drained rice, paneer cubes and rajma and mix well.
- Add 2 cups of water and chopped coriander leaves and cook it covered at low flame till done, stirring occasionally in between.
- Once the rice is cooked, gently fluff up the pulao with a fork or a wooden ladle and serve with raita and pickle
