Rava Payasam / Semolina Payasam

Ingredients:

1/4 cup semolina / rava

500 ml milk

1/2 cup water

1 pinch saffron

1/4 cup condensed milk

2-3 tbsp sugar

1/4 tsp cardamom powder

1 1/2 tbsp ghee

2 tbsp cashew nuts

1 tbsp raisins

Preparation:

  1. Soak a pinch of saffron in 1 tbsp hot water and keep it aside.
  2. Heat ghee in a thick bottomed pan and fry the cashew nuts and raisins and keep it aside.
  3. In the same pan, add semolina and roast at low flame without changing the colour.
  4. Add milk little by little, stirring continuously at low flame without getting lumps.
  5. When it is about to boil, add 1/2 cup of water and mix well and cook at low flame for about 5 minutes.
  6. Add soaked saffron and mix well and cook at low flame for 5 minutes.
  7. Then add the condensed milk and sugar and mix well for 2 minutes till sugar dissolves.
  8. Add cardamom powder into this and mix well. Switch off the flame.
  9. Add the fried cashew nuts and raisins to the payasam.. Serve it warm or chilled…
