Rava Payasam / Semolina Payasam

Ingredients:
1/4 cup semolina / rava
500 ml milk
1/2 cup water
1 pinch saffron
1/4 cup condensed milk
2-3 tbsp sugar
1/4 tsp cardamom powder
1 1/2 tbsp ghee
2 tbsp cashew nuts
1 tbsp raisins
Preparation:
- Soak a pinch of saffron in 1 tbsp hot water and keep it aside.
- Heat ghee in a thick bottomed pan and fry the cashew nuts and raisins and keep it aside.
- In the same pan, add semolina and roast at low flame without changing the colour.
- Add milk little by little, stirring continuously at low flame without getting lumps.
- When it is about to boil, add 1/2 cup of water and mix well and cook at low flame for about 5 minutes.
- Add soaked saffron and mix well and cook at low flame for 5 minutes.
- Then add the condensed milk and sugar and mix well for 2 minutes till sugar dissolves.
- Add cardamom powder into this and mix well. Switch off the flame.
- Add the fried cashew nuts and raisins to the payasam.. Serve it warm or chilled…
