Rava Uttappam / Mixed Vegetable Rava Uthappam

Ingredients:
1 cup rava
1/2 cup curd / yogurt
1 carrot, grated
1 big onion, finely chopped
1 tomato, finely chopped
2 green chillies, finely chopped
1-2 tbsp coriander leaves, chopped
salt to taste
1/4 tsp baking soda
oil, as required
Preparation:
- In a bowl, add rava, yogurt and 1 cup of water and mix well and keep it covered for 15 minutes.
- In another bowl, add grated carrot, chopped onion, tomato, green chillies, coriander leaves and mix well adding little salt. Keep it aside.
- After 15 minutes, mix well the batter and transfer to a blender and blend well to a fine paste. Add 1 tbsp water if required and blend again to a thick dosa batter consistency.
- Transfer to a bowl and add baking soda and salt and mix well.
- Heat a pan at medium flame and grease little oil.
- Pour a ladleful of batter and when holes starts to appear add vegetable mix and gently press it with spatula.
- Drizzle a tsp of oil all over and around the uthappam. Once the base is golden brown , turn over and cook the other side.
- Remove from the pan and serve hot with chutney or sambar...
