raw-mango-carrot-pickle

Ingredients:


2 raw mangoes / pacha manga

1 carrot

8 big garlic cloves, sliced

1 big piece ginger, sliced

8-10 green chillies, chopped

3-4 tbsp salt, or as required

1 sprig curry leaves

1/4 tsp roasted fenugreek powder

1/2 tsp asafoetida powder

1/4 tsp turmeric powder

3-4 tbsp vinegar, or as required

1/2 tsp fenugreek seeds

1 tsp mustard seeds

3 tbsp gingelly oil / sesame oil


Preparation:


  1. Wash the mango, pat dry and cut into thin strips.
  2. Peel and cut carrot into thin slices.
  3. In a bowl, add the sliced carrot, raw mango and salt, mix well and keep it covered for 4 hours or overnight.
  4. Heat gingelly oil in a pan and splutter mustard seeds and add fenugreek seeds.
  5. Add curry leaves, chopped green chillies, ginger and garlic and saute till the raw smell disappears.
  6. Add turmeric powder, roasted fenugreek powder and asafoetida powder and mix well on low flame.
  7. Add salted mango-carrot mix and mix well.
  8. Add required vinegar, mix well and cook for 2-3 minutes and switch off the flame.
  9. Cool completely and store in an airtight glass jar/ bharani...It tastes best after one day...
