Ingredients:
2 raw mangoes / pacha manga
1 carrot
8 big garlic cloves, sliced
1 big piece ginger, sliced
8-10 green chillies, chopped
3-4 tbsp salt, or as required
1 sprig curry leaves
1/4 tsp roasted fenugreek powder
1/2 tsp asafoetida powder
1/4 tsp turmeric powder
3-4 tbsp vinegar, or as required
1/2 tsp fenugreek seeds
1 tsp mustard seeds
3 tbsp gingelly oil / sesame oil
Preparation:
- Wash the mango, pat dry and cut into thin strips.
- Peel and cut carrot into thin slices.
- In a bowl, add the sliced carrot, raw mango and salt, mix well and keep it covered for 4 hours or overnight.
- Heat gingelly oil in a pan and splutter mustard seeds and add fenugreek seeds.
- Add curry leaves, chopped green chillies, ginger and garlic and saute till the raw smell disappears.
- Add turmeric powder, roasted fenugreek powder and asafoetida powder and mix well on low flame.
- Add salted mango-carrot mix and mix well.
- Add required vinegar, mix well and cook for 2-3 minutes and switch off the flame.
- Cool completely and store in an airtight glass jar/ bharani...It tastes best after one day...
