Ingredients:


200 gm red spinach / red amaranth / chuvanna cheera, finely chopped

big gooseberry sized tamarind

1/2 tsp turmeric powder

1 cup grated coconut

3 + 2 dry red chillies

salt to taste

1 tsp mustard seeds

1 sprig curry leaves

1 1/2 tbsp coconut oil


Preparation:


  1. Finely chop the leaves and cut the stems into pieces.
  2. Soak tamarind in 1 cup of water, extract its juice and keep it aside.
  3. Grind grated coconut and 3 dry red chillies adding little water and keep it aside.
  4. In a clay pot / pan, add chopped cheera, turmeric powder, salt and cook adding enough water.
  5. Add tamarind water and mix well and allow to boil.
  6. Then add ground coconut paste and mix well. Adjust the salt and boil well.
  7. Heat coconut oil in a pan and splutter mustard seeds and add 2 dry red chillies and curry leaves.
  8. Pour this seasoning to the curry and mix well and serve with rice….
