Ingredients:
200 gm red spinach / red amaranth / chuvanna cheera, finely chopped
big gooseberry sized tamarind
1/2 tsp turmeric powder
1 cup grated coconut
3 + 2 dry red chillies
salt to taste
1 tsp mustard seeds
1 sprig curry leaves
1 1/2 tbsp coconut oil
Preparation:
- Finely chop the leaves and cut the stems into pieces.
- Soak tamarind in 1 cup of water, extract its juice and keep it aside.
- Grind grated coconut and 3 dry red chillies adding little water and keep it aside.
- In a clay pot / pan, add chopped cheera, turmeric powder, salt and cook adding enough water.
- Add tamarind water and mix well and allow to boil.
- Then add ground coconut paste and mix well. Adjust the salt and boil well.
- Heat coconut oil in a pan and splutter mustard seeds and add 2 dry red chillies and curry leaves.
- Pour this seasoning to the curry and mix well and serve with rice….
