Red Velvet Milk Cake / Red Velvet Tres Leches Cake

Ingredients:
For the cake:
3/4 cup plain flour
1 tbsp cocoa powder
1/2 tsp baking powder
1/4 tsp salt
1/2 cup lukewarm milk
1 tsp vinegar
1/2 cup sugar, powdered
1/4 cup oil
1/2 tsp vanilla essence
2 tbsp yogurt
1 tsp lemon juice
red food colour
For Milk Mixture:
1 cup condensed milk
1 cup chilled milk
1 cup evaporated milk
For Frosting / Topping:
1 cup whipping cream
1/4 cup icing sugar
1/2 cup cream cheese
Preparation:
- Preheat the oven to 180 degree celcius. Grease a glassware / heatproof dish with cooking spray or butter and keep it aside.
- In a bowl, add lukewarm milk and vinegar and mix well and keep it aside.
- Add sugar and oil in a large mixing bowl and whisk well.
- Add buttermilk (step 2 ) and vanilla essence and mix well.
- Then add yogurt and lemon juice and mix well. Add required red food colour to this and mix well.
- In another bowl, sift together plain flour, cocoa powder, baking soda and salt.
- Add this flour mixture to the wet ingredient and mix well.
- Transfer the batter into the prepared glassware / dish and smooth into an even layer and then tap to release the air bubbles.
- Bake in the preheated oven for 20-25 minutes or until a skewer inserted in the centre comes out clean.
- Remove the cake from oven and let it cool completely.
- In a bowl / jug, make the milk mixture by adding milk, evaporated milk and condensed milk and combining well using a whisk.
- When the cake is completely cooled, poke holes on the cake with a fork / skewer.
- Pour the milk mixture all over the entire cake (reserve some to pour while serving) and then refrigerate for at least 4 hours to allow the cake to soak up all the milk.
- In a bowl, beat the cream and icing sugar till you get soft peaks.
- Then add cream cheese and whip until firm peaks form.
- Spread / pipe out the frosting on top of the cake.
- Decorate it with cake crumbs/ red sprinkles or as desired. Chill it for 1-2 hours..
- While serving, cut into slices and pour the remaining milk mixture around the cake slice and serve…
