Ingredients:


1 1/2 cup roasted rice flour ( idiyappam / appam flour )

1 egg

1/4 cup sugar

a pinch of salt

1 cup thick coconut milk

1/4 cup water

3/4 tsp black sesame seeds

oil, for frying


Preparation:


  1. In a blender, add egg, sugar, salt , coconut milk and water and blend well for a minute.
  2. Add roasted rice flour into this and mix with a spoon and then blend for a minute.
  3. Transfer to a bowl and add black sesame seeds and mix well. The consistency of the batter should be slightly thinner than dosa batter.
  4. Then keep it covered for 15-20 minutes.
  5. Heat oil in a pan for deep frying. Dip the achappam mould in the hot oil for a minute and then dip 3/4th of the mould in the batter ( Note :Do not dip the mould completely into the batter).
  6. Then dip the batter coated mould in the hot oil without touching the bottom of the pan.
  7. Shake the mould lightly after 30 seconds so that it will loosen and drop into the oil.
  8. Fry both sides until golden colour and crispy on medium flame and drain onto a paper towel.
  9. Mix the batter in between and repeat the process by dipping the achappam mould in hot oil each time before dipping it in the batter.
  10. Allow it to cool and store in an air tight container...
