Ingredients:


1 medium potatoes, peeled and chopped

1 carrot, chopped

1/4 cup fresh green peas

1 medium onion, sliced

2 green chillies, slit

1/2 tsp ginger, chopped

4 garlic cloves, chopped

2 sprig curry leaves

1/4 tsp turmeric powder

1 tsp red chilli powder

1 tsp kashmiri chilli powder

1 tsp coriander powder

1/2 tsp pepper powder

1/2 tsp garam masala

3 tbsp grated coconut

salt to taste

4 shallots, sliced

3-4 tbsp coconut oil


Preparation:


  1. Heat coconut oil in a thick bottomed pan and add chopped potatoes and saute and cook for 3-4 minutes.
  2. Then add chopped carrot and peas and saute for 2-3 minutes. Keep it aside.
  3. In the same oil, add sliced onion, green chillies and 1 sprig curry leaves and saute well till soft.
  4. Add chopped ginger and garlic and saute till raw smell goes.
  5. Add turmeric powder, red chilli powder, kashmiri chilli powder, coriander powder, 1/4 tsp garam masala and salt and mix well.
  6. Add sliced tomato and saute well till soft.
  7. Add sautéed vegetables and mix well till coated with masala.
  8. Add enough hot water and mix well and cook covered till done.
  9. In the meantime, roast grated coconut till golden. Allow to cool and then grind to a paste adding little water.
  10. When vegetables are cooked well, add ground coconut and mix well and allow to boil well.
  11. Add pepper powder and 1/4 tsp garam masala and mix well and boil well till it thickens. Switch off the flame.
  12. Heat 2 tsp coconut oil in a small pan and add shallots and 1 sprig curry leaves and fry till golden and add to the curry. Mix well and serve with rice...
