Salad Curry

Ingredients:

1 big onion, thinly sliced

3 green chillies, slit

3/4 tsp ginger, thinly sliced

1 big tomato, thinly sliced

1 cup yogurt, beaten well

1 dried red chilli

few curry leaves

1/2 tsp mustard seeds

salt to taste

3 tsp coconut oil

Preparation:

  1. Heat oil in a pan and splutter mustard seeds. Add dried red chillies and curry leaves and fry.
  2. Add sliced onion, green chillies, ginger and salt and cook for 1-2 minutes.
  3. Add sliced tomato and cook for 2 minutes till onion turns soft.
  4. Add beaten yogurt to this and mix well. Adjust salt and cook for a minute at low flame. Do not boil.
  5. Switch off the flame and serve with rice as side dish...
