Schezwan Chicken Macaroni

Ingredients:


2 cups macaroni

1 cup boneless chicken, cut into small cubes

1 tsp + 1 tsp chilli powder

1/4 tsp + 1/4 tsp turmeric powder

1/4 tsp pepper powder

1/2 tsp + 2 tsp soy sauce

1 1/2 tbsp garlic, finely chopped

2 green chillies, chopped

1 medium onion, chopped

4 tbsp green capsicum, chopped

4 tbsp red capsicum, chopped

1 carrot, chopped

2 1/2 tbsp schezwan sauce

salt to taste

2 tbsp spring onions, chopped

1/2 tsp oregano / pasta seasoning

oil, as required


Preparation:


  1. Boil water in a large pan and add macaroni and salt and cook for 9-10 minutes or according to the package instructions. Drain the pasta and drizzle 1 tbsp oil, reserving some macaroni cooked water aside.
  2. In a bowl, add the cleaned chicken and marinate it with 1 tsp chilli powder, 1/4 tsp turmeric powder, pepper powder, 1/2 tsp soy sauce and salt.
  3. Heat 2 tbsp oil in a pan and fry the marinated chicken on low flame till done and keep it aside.
  4. Heat 1 tbsp oil in a pan and add chopped garlic and saute well.
  5. Add chopped green chillies and onion and saute well.
  6. Add chopped green capsicum, red capsicum and carrot and stir fry for 2 minutes.
  7. Then reduce the flame to low and add 1 tsp chilli powder, 1/4 tsp turmeric powder and salt and mix well.
  8. Add 1/2 cup macaroni cooked water and mix well.
  9. Then add cooked macaroni, fried chicken, schezwan sauce and 2 tsp soy sauce and mix well at high flame until the sauce coats well with the macaroni.
  10. Check the seasoning and add more sauce and salt if needed.
  11. Garnish with the chopped spring onions and oregano / pasta seasoning. Switch off the flame and serve hot..
