Schezwan Chicken Macaroni

Ingredients:
2 cups macaroni
1 cup boneless chicken, cut into small cubes
1 tsp + 1 tsp chilli powder
1/4 tsp + 1/4 tsp turmeric powder
1/4 tsp pepper powder
1/2 tsp + 2 tsp soy sauce
1 1/2 tbsp garlic, finely chopped
2 green chillies, chopped
1 medium onion, chopped
4 tbsp green capsicum, chopped
4 tbsp red capsicum, chopped
1 carrot, chopped
2 1/2 tbsp schezwan sauce
salt to taste
2 tbsp spring onions, chopped
1/2 tsp oregano / pasta seasoning
oil, as required
Preparation:
- Boil water in a large pan and add macaroni and salt and cook for 9-10 minutes or according to the package instructions. Drain the pasta and drizzle 1 tbsp oil, reserving some macaroni cooked water aside.
- In a bowl, add the cleaned chicken and marinate it with 1 tsp chilli powder, 1/4 tsp turmeric powder, pepper powder, 1/2 tsp soy sauce and salt.
- Heat 2 tbsp oil in a pan and fry the marinated chicken on low flame till done and keep it aside.
- Heat 1 tbsp oil in a pan and add chopped garlic and saute well.
- Add chopped green chillies and onion and saute well.
- Add chopped green capsicum, red capsicum and carrot and stir fry for 2 minutes.
- Then reduce the flame to low and add 1 tsp chilli powder, 1/4 tsp turmeric powder and salt and mix well.
- Add 1/2 cup macaroni cooked water and mix well.
- Then add cooked macaroni, fried chicken, schezwan sauce and 2 tsp soy sauce and mix well at high flame until the sauce coats well with the macaroni.
- Check the seasoning and add more sauce and salt if needed.
- Garnish with the chopped spring onions and oregano / pasta seasoning. Switch off the flame and serve hot..
