Ingredients:
1 cup soya chunks
2 cups basmati rice
2 tsp kashmiri chilli powder
1/2 tsp turmeric powder
1 tsp ginger-garlic paste
1 tbsp garlic, finely chopped
1 onion, finely chopped
1 green chilli, chopped
1/2 cup cabbage, finely chopped
1/2 cup carrot, finely chopped
3-4 beans, finely chopped
1/2 cup capsicum, finely chopped
salt to taste
1 1/2-2 tsp pepper powder
1 tbsp soy sauce
1 tsp chilli flakes
2 tbsp oil
1 tbsp spring onions, chopped
Preparation:
- Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool completely.
- Soak the soya chunks in hot water for 20-30 minutes. Then drain the water, rinse with cold water and squeeze out the excess water completely.
- Then marinate it with kashmiri chilli powder, turmeric powder, ginger - garlic paste and salt for 10-15 minutes.
- Heat 1 tbsp oil in a pan and fry the marinated soya chunks and keep it aside.
- Add 1 tbsp oil in the same pan and add chopped garlic and onion and saute.
- Add chopped carrot, beans, cabbage, capsicum, green chilli and saute adding salt. Don't overcook the vegetables.
- Add soy sauce, pepper powder and chilli flakes and mix well.
- Add cooked rice and fried soya chunks and mix for 3-4 minutes till well combined.
- Garnish with chopped spring onion and mix well and remove from the flame. Serve hot..
