Ingredients:


1 cup soya chunks

2 cups basmati rice

2 tsp kashmiri chilli powder

1/2 tsp turmeric powder

1 tsp ginger-garlic paste

1 tbsp garlic, finely chopped

1 onion, finely chopped

1 green chilli, chopped

1/2 cup cabbage, finely chopped

1/2 cup carrot, finely chopped

3-4 beans, finely chopped

1/2 cup capsicum, finely chopped

salt to taste

1 1/2-2 tsp pepper powder

1 tbsp soy sauce

1 tsp chilli flakes

2 tbsp oil

1 tbsp spring onions, chopped


Preparation:


  1. Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool completely.
  2. Soak the soya chunks in hot water for 20-30 minutes. Then drain the water, rinse with cold water and squeeze out the excess water completely.
  3. Then marinate it with kashmiri chilli powder, turmeric powder, ginger - garlic paste and salt for 10-15 minutes.
  4. Heat 1 tbsp oil in a pan and fry the marinated soya chunks and keep it aside.
  5. Add 1 tbsp oil in the same pan and add chopped garlic and onion and saute.
  6. Add chopped carrot, beans, cabbage, capsicum, green chilli and saute adding salt. Don't overcook the vegetables.
  7. Add soy sauce, pepper powder and chilli flakes and mix well.
  8. Add cooked rice and fried soya chunks and mix for 3-4 minutes till well combined.
  9. Garnish with chopped spring onion and mix well and remove from the flame. Serve hot..
