Soya Kondattam

Ingredients:
2 cups soya chunks
2 tbsp + 1 tbsp kashmiri chilli powder
1/2 tsp + 1/4 tsp 1/4 turmeric powder
1/2 tsp + 1/4 tsp garam masala
1 tbsp + 1/2 tbsp ginger-garlic paste
1 tbsp cornflour
1 tsp lemon juice
2 sprig curry leaves
4-5 dry red chillies
1/4 tsp fennel seeds
8 shallots, sliced
1 onion, thinly sliced
1 tbsp + 1/4 tsp chilli flakes
3 tbsp tomato sauce
salt to taste
oil, as required
Preparation:
- Boil enough water in a pan and add soya chunks and boil for 2-3 minutes till soft.
- Then drain the water, rinse with cold water and squeeze out the excess water completely and keep it aside in a bowl.
- In a bowl, add 2 tbsp kashmiri chilli powder, 1/2 tsp turmeric powder, 1/2 tsp garam masala, salt, 1 tbsp ginger-garlic paste, cornflour, lemon juice and 2-3 tbsp water and mix well.
- Add drained soya into this and mix well till coated.
- Heat little oil in a pan and fry the marinated soya and keep it aside.
- Heat 2 tbsp oil ( use oil used for frying soya ) in a pan and fry curry leaves and dry red chillies and keep it aside.
- In the same oil add fennel seeds and when it splutters, add sliced shallots and saute well.
- Add thinly sliced onion and salt and saute well.
- Add 1/2 tbsp ginger-garlic paste and curry leaves and saute well till raw smell goes.
- Add 1/4 tsp turmeric powder, 1 tbsp kashmiri chilli powder, 1/4 tsp garam masala and 1 tbsp chilli flakes and mix well till raw smell goes.
- Add tomato sauce and 4 tbsp water and mix well.
- When it starts to boil, add fried soya, 1/4 tsp chilli flakes, fried dry red chillies and curry leaves and mix well till combined.
- Adjust the salt and switch off the flame...Serve hot…
- Adjust the spice level to your taste
