Spinach and Corn Bake

spinach-and-corn-bake

Ingredients:


3 cups spinach, chopped

1 cup sweet corn

1 1/4 tsp garlic, finely chopped

1 medium onion, chopped

1 tsp chilli flakes

2 tbsp plain flour

1 1/2 cup milk

1/3 cup + 100 gm grated cheese

2 tbsp parsley leaves, chopped

salt to taste

1/2 tsp pepper powder

1/2 tbsp olive oil

1 1/2 tbsp + 1 1/2 tbsp butter


Preparation:


  1. Heat butter and olive oil in a pan and add chopped garlic and onion and saute till soft.
  2. Add 3/4 tsp chilli flakes and sweet corn and saute for a minute.
  3. Add chopped spinach and salt and saute for 3-4 minutes.
  4. Add 1 1/2 tbsp butter in the middle of the pan and add plain flour and saute for 1-2 minutes.
  5. Reduce the flame to low and gradually add the milk and mix well.
  6. When it starts to thicken, add cheese and parsley and mix well.
  7. Switch off the flame and add the pepper powder and adjust the salt.
  8. Preheat the oven to 180 degree celcius.
  9. Transfer to a baking dish and sprinkle 1/4 tsp chilli flakes and 100 gm grated cheese on top,
  10. Bake in the preheated oven for 20 -25 minutes until golden brown colour.
