Spinach and Corn Bake

Ingredients:
3 cups spinach, chopped
1 cup sweet corn
1 1/4 tsp garlic, finely chopped
1 medium onion, chopped
1 tsp chilli flakes
2 tbsp plain flour
1 1/2 cup milk
1/3 cup + 100 gm grated cheese
2 tbsp parsley leaves, chopped
salt to taste
1/2 tsp pepper powder
1/2 tbsp olive oil
1 1/2 tbsp + 1 1/2 tbsp butter
Preparation:
- Heat butter and olive oil in a pan and add chopped garlic and onion and saute till soft.
- Add 3/4 tsp chilli flakes and sweet corn and saute for a minute.
- Add chopped spinach and salt and saute for 3-4 minutes.
- Add 1 1/2 tbsp butter in the middle of the pan and add plain flour and saute for 1-2 minutes.
- Reduce the flame to low and gradually add the milk and mix well.
- When it starts to thicken, add cheese and parsley and mix well.
- Switch off the flame and add the pepper powder and adjust the salt.
- Preheat the oven to 180 degree celcius.
- Transfer to a baking dish and sprinkle 1/4 tsp chilli flakes and 100 gm grated cheese on top,
- Bake in the preheated oven for 20 -25 minutes until golden brown colour.
