Ingredients:
1 cup spinach leaves
3 shallots, crushed
1 tbsp crushed ginger-garlic
2 green chillies, chopped
1 sprig curry leaves
1/2 tsp turmeric powder
1 cup yogurt, beaten
1/2 tsp mustard seeds
1/2 tsp fenugreek seeds
2-3 dry red chillies
salt to taste
1 tbsp coconut oil
Preparation:
- Boil water in a sauce pan and add spinach leaves and blanch them for 2-3 minutes or till wilted. Drain the water and when it cools down, puree it to a smooth paste adding 1/2 cup water and keep it aside.
- Heat oil in a pan and splutter mustard seeds and fenugreek seeds.
- Add dry red chillies, curry leaves, crushed shallots, ginger - garlic, green chillies, turmeric powder and saute well.
- Add beaten yogurt into this and mix well.
- Then add 1/2 cup spinach puree and salt and mix well until it is heated through. Do not let it boil.
- Adjust the salt and remove from flame. Serve with rice...
